Jen Can Eat That! : Gluten-free Peanut Butter Chocolate Chip Cookies

A good friend of mine gave me a wonderful allergy-friendly cookbook. It has recipes that are gluten-free. It also has recipes that are dairy-free, egg-free, or nut-free. So, some of the recipes have gluten, but can be easily adapted.

Shawn and I have been enjoying a recipe for flourless peanut butter cookies. We’ve had them several times now. Shawn likes to experiment by adding different ingredients than were in the original recipe. (He put banana in them recently and it was delicious).

Jen Can Eat That!: Sweet Street Chewy Marshmallow

There are some similarities between Starbucks and the Cafe that is inside a Barnes & Noble store. Most (if not all) of the drinks are identical. The big difference is in the food and pastry options.

Starbucks has a gluten-free pastry that comes in a sealed package (to prevent cross contamination). It is called the La Boulange Marshmallow Dream Bar. Barnes & Noble has a gluten-free pastry that comes in a sealed package, too. It is called Sweet Street Chewy Marshmallow.

Jen Can Eat That!: WOW Ginger Molasses Cookies

The “Jen Can Eat That!” series is a collection of foods that are safe for me to eat. I have a lot of food allergies, and it really limits my options. When I find something allergy-friendly, and that tastes good, I like to blog about it so others can find it.

The WOW Ginger Molasses cookies are soft, flavorful, and gluten-free. They are a good alternative to gingerbread cookies that are made with wheat (and that I cannot safely eat).

Jen Can Eat That!: Gluten Free Pasta from Bella Pizza Pasta

The “Jen Can Eat That!” series of blogs are a celebration of food that I can safely eat. I’ve got tons of food allergies, and that makes it extremely difficult to find food that won’t cause me harm. When I find safe food, that tastes good, I like to feature it here.

Those of you who have celiac disease, who are allergic to wheat, rye, and/or barley, or have a gluten intolerance know how difficult it can be to find a restaurant that serves gluten-free pasta. I found a family-owned restaurant that not only serves gluten-free pasta, but also makes gluten-free pizza. It is called Bella Pizza Pasta.

Jen Can Eat That!: La Boulange Marshmallow Dream Bar

The “Jen Can Eat That!” series of blogs are a celebration of food that I can safely eat. I’ve got tons of food allergies, and this makes it extremely difficult to find food that won’t cause an allergic reaction. When I find one that not only is safe, but also tastes good, I like to feature it here.

Have you ever stood in front of the pastry case in a Starbucks and lamented about all the lovely treats that you can’t have? I suspect this might be the case for many people (but for different reasons). The biggest problem for me is that the entire case is contaminated with gluten. The food contains wheat. The tongs that are used to take out the food touch wheat. It spreads to whatever else the tongs are used to pick up from the pastry case.

Fortunately, there is one safe option for me. I can eat the La Boulange Marshmallow Dream Bar!

Did you know that the package...

Jen Can Eat That!: Immaculate Gluten Free Chocolate Chunk Cookies

The “Jen Can Eat That!” series of blogs are a celebration of the things that I can safely eat. I’ve got tons of food allergies and this greatly limits what I’m able to eat or drink. When I finally find something good, I like to make a note of it in my blog. I also like to share what I found with others who may have (some of) the same food allergies that I do.

The Immaculate Baking Company was started by Scott Blackwell in 1989. It was originally a restaurant called “Immaculate Consumption”. Eventually, the company changed their focus to cookies. They joined the Non GMO Project. In 2013, the Immaculate Baking Company joined General Mills.

The grocery store I was shopping at...

Jen Can Eat That!: Trios Gluten Free Girl Scout Cookies

I started the “Jen Can Eat That!” series as a celebration of foods that taste good and are safe for me to eat.  I’ve got tons of food allergies, so my food choices are severely limited.  When I find something good, I like to do a review of it.  The goal is to share what I’ve found with people who have (some of ) the same food allergies as I do.

In 2015, the Girl Scouts of America began offering gluten-free Girl Scout cookies.  It’s about time!  I was overjoyed when I noticed that the Girl Scouts who had set up a table near the door of my local grocery store had some.  The gluten-free options cost $5.00 (while the others cost $4.00).  Considering that all gluten-free food costs more than the “regular” versions – this seemed like a reasonable price to me.

To be clear, not all versions of Girl Scout coo...

The “Jen Can Eat That!” series is a celebration of foods that taste good and are safe for me to eat. I’ve got tons of food allergies which greatly limit my food choices. All it takes is for one allergen to be in the food and I will get sick.

When I find a food that is safe for me to eat, I like to write about it. This is my way of keeping track of the good stuff and also sharing it with other people who have some of the same food allergies that I do.

Jen Can Eat That!: Bowlwich from Which Wich

The “Jen Can Eat That!” series is a celebration of the foods that I can safely eat.  I’ve got tons of food allergies, and this makes dining out a nightmare.  Everybody else can just eat whatever sounds good to them at the moment.  Me?  I have to do a ton of investigative research first, and then ask a lot of questions at the restaurant.  When I finally find something safe to eat – I am absolutely overjoyed.  This is especially true when the food tastes good.

Jen Can Eat That!: Glutino Double Chocolate Brownie Mix

The “Jen Can Eat That!” series is a celebration of foods that taste good and that are safe for me to eat. I’ve got tons of food allergies and they make it really difficult for me to find food that actually tastes good. Some gluten-free versions of baked goods don’t taste anything like one would expect. That’s why I like to point out the ones that are wonderful.
